Turkey thighs

In the Modernist Recipes Forum
I am entirely new to this process of cooking. I would like to prepare several turkey thighs to supplement my smoked turkey for Christmas dinner, in my new sous vide cooker. I'd like to know how to do it.

I typically do turkey or chicken thighs at 148°F / 64.4°C for 3 to 6 hours (or up to 12). For shredded thighs you'll want to do higher and longer, about 165°F (73.9°C) for 8 to 12 hours. Here's a few turkey and chicken thigh recipes:

- Sous Vide Turkey
- Sous vide turkey thigh with Jamaican jerk paste
- Shredded sous vide chicken thigh
- Sous vide chicken thigh with orange-mint glaze.
