Substitute for mono and diglyceride flakes?

In the Modernist Ingredients and Equipment Forum
Hi, I want to make some oil foams but I cannot buy the flakes locally. I have just about every other thickener/emulsifier. What would be the best substitute?

Also, just a suggestion, I think it would be great to have the best alternative thickener mentioned with every recipe, maybe for the next edition.

Hmm, I'm not really sure if there's a good substitute (that could be found locally) but they can also be called "glycerin flakes", despite having no glycerin in them.

I'd probably just recommend purchasing them online. I get all my stuff from ModernistPantry.com (we do have an affiliate relationship with them but that's because I believe in their products). They have it in small quantities so you can try it out.
